The name Eisyo was chosen by Mr. Shinojima-chu, a graduate of the Tokyo University of the Arts. He named the vessels "Eisyo" at the time of Hideo Teramae, the third generation of his family, hoping that Kutani Bitoen's vessels would "make the most of the superior and beautiful stones of Kutani". Mr. Shinojima-chu was a culinary researcher from the Showa to the Heisei era, and his family was the Okamoto family, which had been involved in the cooking of the Emperor's family at the Kyoto Imperial Palace for generations. He often appeared on TV cooking shows in his smart Japanese clothing and left behind more than 40 books on the basics of Japanese cuisine.
